Today is Shrove Tuesday, and to celebrate, now’s the perfect time to try out this Food Wars soufflé pancake recipe that recreates Erina Nakiri’s delectable Soufflé Léger de Grâce.

Shrove Tuesday is the final day of Shrovetide, and it happens on the day before Ash Wednesday. As it’s the last day before Lent, it’s usually a day when people eat pancakes and other sweet food.

This is generally observed in the Anglosphere and Christian Europe as other places such as historically French US cities celebrate Mardi Gras instead.

Still, Shrove Tuesday is a great excuse to eat pancakes, and for anime fans, no pancake may be better than this version from Food Wars.

Food Wars: Erina Nakari’s Soufflé Pancake Ingredients

During Food Wars' Rebels Vs. Central Régiment de Cuisine, Erina Nakiri whipped up a soufflé pancake that combined French, Japanese, and Greek cuisines.

Soufflé pancakes are a popular dessert in Japan, and it is essentially a cross between a typical pancake and an airy soufflé.

Erina’s version also includes Greek yogurt for a bit of tartness. There’s also red bean paste in the middle inspired by the Japanese dessert dorayaki (which is like a pancake sandwich with red bean paste).

The ingredients of the soufflé pancake are as follows:

  • Flour
  • Egg yolks
  • Leavening agent
  • Greek yogurt (filtered in a colander with coffee filters)
  • Meringue (made with egg whites and sugar)

Meanwhile, the red bean paste needs red beans cooked in a pressure cooker, combined with muscovado sugar to form a paste.

For its garnishes, the dish features the following:

  • Edible flowers
  • Whipped cream
  • Butter
  • Maple syrup
  • Black sesame tuile

A tuile is a baked wafer of French origin, and it’s usually added as an eye-catching garnish to the dessert.

Erina’s dish features a unique take on the tuile as it is made with black sesame paste combined with muscovado sugar for an extra Japanese touch.

How to Recreate Erina’s Soufflé Pancakes in Real Life

Soufflé pancakes are notoriously difficult to make given how easy it is to make the pancake flat instead of light and airy.

Thankfully, there are several useful how-to recipe videos, so fans can try their hand at the Food Wars soufflé pancake.

First is a version by Anime with Alvin for Babish Culinary Universe. This take on the dessert is close to the anime version as the red bean paste, yogurt, and tuile are prepared as mentioned in the anime.

For fans who still want to try it but lack certain ingredients or equipment, there’s a simplified version by Anime Kitchen.

This version won’t require a pressure cooker. It also won’t need a tuile as it’s swapped with edible coral that can be made on a pan.
