It's a complicated answer, but essentially, Spiral saved them for her own sake, too.

When Jubilee and Roberto first entered the video game Mojo specifically created for his mutant enemies, Spiral was in charge of the tech behind which opponent they get to face next.

However, in the middle of Mojo's orders, Spiral would often make side comments like "This is what you get when you kill tech support."

Even though Spiral has six arms, this doesn't mean she can manage the entire game on her own, after all.

Spiral did end up saving Jubilee and Roberto in the end when it was later revealed that she intentionally executed her own boss Mojo behind his back. This led him to disappear from the game as its big boss.

Now, as for the person who gave the "extra life" to save Roberto from dying in real life, Spiral didn't seem to have had anything to do with that. In fact, when Mojo told him to get rid of it, Spiral relaunched their version of Magneto.

The person who gave the extra life here was the old version of Jubilee, who Mojo replicated as a beta tester for his "game".

Given what Jubilee and Roberto went through in X-Men '97 episode 4, does this mean Spiral is a good guy or a bad guy in the series?

Spiral is canonically a villain in the Marvel comics, as well as in her television history in X-Men: The Animated Series and Wolverine and the X-Men.

Although her motive seems lacking, apart from the fact that she serves as Mojo's righthand man in his battles. In the past, she had captured the X-Men multiple times for Mojo, but as for X-Men '97, her fate remains unseen for now.

All episode 4 did show us is that she isn't willing to get bossed around by the same blob who keeps aggressively taunting her to heed his wishes. We'll likely get to see more of what she's made of as the show progresses.
